The scalding process is significant for the overall process. This has to be decided with the end-product in mind. Basically it is finding the perfect balance between time, temperature and end product characteristics.

Scalders are available as single or multi-pass units. Special models with deep baths are available for large birds such as turkeys.

The Scalders can be supplied in several sections to separate washing and cleaning sections, and to create counter flow.
